A mezze plate finished with rare Wild (Delice) OLEA
Recommended oil: OLEA Wild (Delice) Olive Oil
Serves: 4 as a starter
Prep time: 10 minutes, plus 1 hour marinating
Ingredients
- 200g firm sheep’s cheese or feta, sliced
- 1 tsp dried chili flakes
- 1 tsp dried mint
- 1 clove garlic, finely grated
- 3 tbsp OLEA Wild (Delice) Olive Oil
- Zest of 1 lemon
- Crusty bread, to serve
Method
- Arrange the cheese slices on a small serving plate.
- In a bowl, stir together the chili flakes, dried mint, garlic, and lemon zest with the OLEA Wild (Delice) Olive Oil.
- Spoon the mixture evenly over the cheese, cover, and let marinate at room temperature for at least 1 hour so the oil absorbs the aromatics.
- Serve with warm crusty bread to soak up the remaining oil.
Chef’s note: Delice is harvested from wild Aegean trees in very limited quantity, so it’s best served simply — uncooked, and close to the moment of tasting — to let its rare character speak for itself.
