Herb-Marinated Sheep’s Cheese

A mezze plate finished with rare Wild (Delice) OLEA

Recommended oil: OLEA Wild (Delice) Olive Oil

Serves: 4 as a starter

Prep time: 10 minutes, plus 1 hour marinating

Ingredients

  • 200g firm sheep’s cheese or feta, sliced
  • 1 tsp dried chili flakes
  • 1 tsp dried mint
  • 1 clove garlic, finely grated
  • 3 tbsp OLEA Wild (Delice) Olive Oil
  • Zest of 1 lemon
  • Crusty bread, to serve

Method

  1. Arrange the cheese slices on a small serving plate.
  2. In a bowl, stir together the chili flakes, dried mint, garlic, and lemon zest with the OLEA Wild (Delice) Olive Oil.
  3. Spoon the mixture evenly over the cheese, cover, and let marinate at room temperature for at least 1 hour so the oil absorbs the aromatics.
  4. Serve with warm crusty bread to soak up the remaining oil.

Chef’s note: Delice is harvested from wild Aegean trees in very limited quantity, so it’s best served simply — uncooked, and close to the moment of tasting — to let its rare character speak for itself.
